In my area in the States, hearts, ox tail, tongue etc. because the cow is killed, cleaned, excavated, and broken down into smaller portions (smaller than a quarter) at a large factory style processing plant. I cannot get those cuts without paying almost as much or more than a top choice steak. I am too far from the local processor (for families and a few local specialty restaurants that are almost exclusively locally owned) to make a determination to see if it is financially feasible to buy meat , I might have to buy several and hundred pounds of lower quality meat to make it break even, let alone come out ahead....

Try the local Mexican ethnic market. Heart, tongue, kidney, etc. are all pretty much available there.

The other thing is talk to the local custom slaughter outfit.

Ditto that, Yakima!

I buy chimaro res (beef shanks) at the Hispanic market...when on sale they're $1.57/lb! Cut it off the bone and it and the marrow goes into the grinder for the best beefy tasting burgers. It's lean but full of flavor.

If you have Muslims in the area, talk to the local halal market. Every animal has to be slaughtered by an halal slaughterer, and they can arrange for locker beeves on request. Locally we even have a halal sheep and goat ranch north of us about 90 minutes to 2 hours away where we can actually look at how the animals are raised before buying.

Halal feeders tend to be scrupulous about feeding, and the market tends to prefer grass fed animals.

I've had people tell me they won't buy meat from the Mexican market or anything from the Asian market because obviously the food is reject stuff unfit for human consumption because it's much cheaper than Wal-Mart.

I prefer to get veggies and fruits from the Asian market because of how high quality they are and they don't spray everything with water. The prices can't be beat. I can get small nonwaxed apples for $.25/lb and make all the butter and sauce I want

All meat sold in the USA is under the same inspection rules. It is not allowed to sell food that is not fit for human consumption.

I buy most of my spices at Asian, South Asian, Middle and Near Eastern, and Latin markets. They are much cheaper, although they tend to come in plastic bags or ugly plastic containers instead of pretty glass bottles.

Some of our local ethnic markets have fresher and better food since many ethnic groups shop daily for food. There is an halal butcher in the Oakland area, Saba, that apparently slaughters poultry on the premises while you wait. Apparently SF has outlawed the live food markets; when I first moved to California, you could go and actually look at the bird to make sure it was healthy, and they sold "black boned fowl" (Silkies) as well as other kinds. Silkies are considered medicinal in traditional Chinese medicine.

I know that for grocery stores. These people actually believe what they were saying. Definitely a stupid thing people say.

I have bought meat at both stores. The mexican store is the only place I can get the really soft poofy chicharones that are huge.

My meat comes with the packages stamped "not inspected. Not for sale". But then I buy half a cow from a farmer. We do eat extra roosters, and if I get the goats I want, we'll be eating extra males there.

I L-O-V-E the produce at our Hispanic market! It is so fresh that sometimes it still has moist dirt on it....not warehoused for eons like some big chains. And by far less expensive than those supermarkets that display their produce like it's art. "Spotlight: Waxy bell peppers and pampered baby beets"

Someone was feeding you a line o' hooey!

The Hispanic and Oriental markets in my area are a joke, unless you want some obscure spice reg. stores don't carry (usually if they don't have it they have 3-4 web sites to look up the item and triple the price for you) might as well shop online for it yourself. oriental/Hispanic herbal remedies can be obtained at a reasonable price I am informed, but grocery wise you might as well go to the local large grocery stores because they have more selection, better quality and cheaper prices. (and the local ethnic markets routinely buy stuff from the local aldi's and other stores to stock their shelves, they can;t deny it if the package says packaged for sale for Aldi or the address of wally world's head quarters) I am referring to the local "custom slaughter house" as you called it. it's about an hour and a half's drive from me and almost as much or more than the large grocers for the "cheap nobody want's cuts" ie tongue, kidney's, ox tail, lung heart etc etc etc, if they will sell it to you. Had them tell me that they refuse to sell pork brains.

The H-Marts around here are great on the food. Prices are the best around. And if we manage to get out without visiting the deli it's a rare trip.

I have a real issue with grocery stores that water the produce. It makes it rot faster and encourages bacteria. And all the waxed foods. bleh

I'll take the no frills from the ethnic markets whenever I can. Only thing better is buying it directly off the farm stand.
