I've been reading that the hens ears determine the color of the eggs.....if this is true what about black hens ours have black ears....and we have a rainbow layer that has white ears
 
It's actually the earlobes, and it's not always a 100% accurate but a chicken that lays brown eggs will have red earlobes and a chicken that lays white eggs has white earlobes is generally a rule of thumb.

Sexlinks lay brown eggs and don't lay white eggs, hence the dark earlobes.

Certain breeds will have different egg colors compared to their earlobes for a certain trait about them.

For example, a Silkie Bantam can have teal and even purple earlobes but they lay light brown/cream colored eggs, it's just a trait.
