Easiest & safest way to catch one of your flock?

I too wait until they are on the roost, well mostly, IF I must chase one down, the fish dip net comes out, as do the warnings being called!
 
Crazy Lady was the bestest chicken catcher when she was younger. Instead of chasing them, make them come to you. She'd get a handful of feed or treats, drop it at her feet and here they come. Grab the one you want while her head is down eating. They won't be happy you interrupted treat time, but oh well.

The clearest and best memory I have of my Granny was sometime back in the early 1950s when the crops were laid buy, and we were all sitting under the apple tree at the back of the kitchen eating watermelon.

Granny's chickens were swirling around us looking for spit out watermelon seeds and dropped chunks of watermelon. Suddenly Granny pounced when a little white pullet ventured to close. In the blink of an eye my 75 plus year old Grand maw had wrung the pullets neck and tossed the pullet's mortal remains up against the apple tree until we were finished eating watermelon with the announcement that tomorrow we would be having fried chicken.

So the bait and switch method of chicken capture certainly works.
