Boy that's a good question! It's my understanding that an EE can lay a green, blue, brown, olive or pink egg. So almost all colors come from EEs. An EE is considered a mutt bird but the obvious criteria would be a pea comb, some muff/beard growth and some blue egg laying genes somewhere in it's lineage (Most likely Ameraucana snce Araucanas are so rare and have breeding difficulties). I used to have Brahmas, which also have a pea comb, but a couple of them layed light green eggs so I guess they were really EEs. They looked just like Buff Brahmas though.
If it lays brown eggs and has no muff or beard growth I would guess it was a different mix, not an EE. Also if it's missing the pea comb I would say not an EE.
