I have both EE and Ameraucanas
My splash EE girl Godzilla was a cute little yellow/white as a day old chick. She was the odd one out lol

Valley Hatchery. I got EE and Blue Ameraucana from them and a bunch of other breeds. Godzilla was considered my extra chick I got lucky. She also lays a beautiful light green mossy color egg.

The star of my flock is definitely Perdita my Ermine Ameraucana. She was from eBay hatching eggs from this springs hatching.

Boys tend to be bolder and more curious. The girls are more cautious. If one comes out to meet you stay away from it, get a meek one from the back. You do not get any guarantees with this but it should improve your odds a little.

I personally haven't found this to be true/reliable with chicks?

Different breeds/genetics will influence how flighty, aggressive, or docile a bird might tend to be.
