Eating a backyard turkey

So I’m a few years into this backyard poultry. We raise chickens and breed bourbon red turkeys. We have eatten a few chickens, ducks, guineas, and some turkeys from our backyard. Well the one gobbler that we have had since the beginning is reallyyyy huge. When I say huge, I mean not even exaggerating.....57lbs. Well we always said he would be thanksgiving dinner one day, but the day is coming soon. And the reason is because he is hurting our females and crushing them while breeding lol. My question is will his meat be too tough? Bc he could feed 20 people easily and I don’t want to let him go to waste.
