Eating duck eggs?

i bake and cook with my duck eggs
there is a huge difference in the end product
i also use them in meat loaf
meatballs
to beat for dipping meat into before dipping into bread crumbs etc
anywhere you would use egg in a dish

i haven't tried fried duck eggs yet
i have scrambled them for the new baby peeps i got last week
they wouldn't eat them!
but the adult chickens devoured them

i am thinking of trying them in cooked eggnog

right now i am just starting to get eggs from my may babies
they are about the size of jumbo chicken eggs
their mother's eggs were the size of TWO jumbo chicken eggs and maybe throw in a bantam

They give my daughter a sour stomach as well. She still eats them though. I know its not in her head as when the family comes for breakfast I use duck eggs sometimes depending on what I have. She always knows when its duck eggs within 1/2 hour her stomach hurts. She can not eat goose eggs either. I bake with them and love the difference they are so much better than chicken eggs.My granddaughter can not eat store eggs. she has no problem with any of our eggs.duck,chicken,goose.
 
This is answering so many questions. People ask me all the time if all eggs taste the same and I don't know because I've only ever had chicken eggs. I wish my girls would start laying. Do ducks lay year round like chickens or seasonally like turkeys?
 
Some ducks lay more eggs than others but they all take a break at somepoint to rejuvenate their bodies. I think runners lay up to 280 eggs a year - alot of eggs!

Duck eggs are wonderful to bake with. I am watching my Appleyards and hoping for eggs any day now.
 
I think duck eggs are absolutely delicious! We like them scrambled. If you like your (chicken) eggs scrambled with a little cheese grated over the top, well the duck eggs don't even need the cheese. They are rich and buttery and.... mmmmm.... I think I need to get some ducks.

We eat our duck eggs and nobody seems to have any problem with them. I actually can't tell the difference between them and the chicken eggs if someone just hands one to me fried. Of course, both the chickens and the ducks eat the same food and free range.

Ironically, while the duck eggs are stiffer and larger than the chicken eggs, their yolks are not as dark orange. The chickens are very dark.

I don't like runny scrambled eggs and that was the only time I ever noticed a difference. The duck eggs get really rubbery if you cook them too long. So now I mix just a bit of milk in with them and they turn out fluffy and light.
 
so it sounds like scrambled is the winner, I'll try that with out telling anyone. my son does like the hard boiled ones.
