Yes, that is true - duck eggs do have more cholesterol. But eating cholesterol is not a problem for most people - it's the saturated fat we eat that our bodies turn into cholesterol that is the problem.
Here is a link to a chart showing that duckeggs are more nutritious all round than chicken eggs
They make the best creme brulee ever. I never eat a chicken egg as long as there's a duck egg around! But my hubby prefers the chicken eggs for some things (fried eggs).
I think most people do not like duck eggs because they think the taste will be gamey/fishy/muddy. If your ducks eat the same feed as chickens, if you keep their water clean and fresh, let them eat a lot of greens and such then the taste is the same as a chickens.
Also, most people (like my mom) are huge texture freaks. If their food does not fall into a specific "feel" while they eat it, they dislike it. Duck eggs have much stronger protein bonds (which is what makes them the absolute best thing ever for baking btw), so the texture after cooking can be much firmer than most people are used to. The yolk is also much bigger, and some people just don't enjoy the yolky goodness. I think the yolks are much creamier than chicken egg yolks though, and my family (even my texture freak mom lol) love them.

lol that was my issue at first was the texture and not the tase. Honestly the taste was quite good. Someone advised mixing your eggs with a hand mixer which would help with the texture and it did. I have never really like fried eggs even chicken eggs and always prefered scrambled. Using the hand mixer made the eggs less firm and more softer actually. I also put in a little milk salt and pepper. My kids seem to like them now that I have made cookies, cupcakes, and french toast with the duck eggs. They are fine with the idea. In fact they thought the french toast was the best I ever made! Awwe! What sweet children! lol
