A chick only develops inside a egg when its incubated at 100deg for 21 days. And it takes 24hrs after incubation has started for anything to begin to form. Theres only about two places you will find these conditions, in an incubator, or under a broody hen.
Just collect the eggs every day and you won't have a problem.
you can let eggs sit on the counter, and there won't be any problems unless its stays exactly 100 deg in side your house.
Eggs just last longer in the fridge.
1 month on the counter
2 months in the fridge
BTW some People have incubated and hatched store bought fertilized eggs that have been refrigerated.
