Does the meat taste weird or not right if you eat an egg layer vs the meat from a meat raised bird?

Yes, it will taste like chicken but different from store bought or KFC. If she is an older bird she might be better suited for slow cooking and then soup or chicken and noodles. But the result will be yummy!
