Take their head off clean and quick. Pinch off what's left of the neck and hold the body firm. It will twitch and bleed. Cut off the wings and bony part of leg. Start at neck area and peel the skin and feathers off all at once. Kind of like peeling off a "feather coat". Cut up the spine. Remove insides. Wash off meat.

Now you can wait 24hrs like some say. Or you can marinate like anything else and grill, fry, roast, or bake. Keep in mind my cleaning method removes the skin. So cooking needs to be adjusted to not dry the meat out.

Its really so easy to butcher my 8 and 9 yr old daughters help.
 
Do it like this. Taking the head off is easy if you are prepared for the force it takes. Don't be gentle and don't hesitate. I prefer to cut with shears or just hold by the head and swing the body like you would a chicken. The head will come off.
