Nice. There's a great Argentinian restaurant in Cozumel I've eaten at a few times. The meat was tremendous.
We have one here too that I just ate at a few months ago for the first time.

My first 2 choices at a restaurant are porterhouse (both New York strip and filet in one) and prime rib. Both rare.
I never met a piece of beef I didn't like. I like the heart, liver, brisket, tongue, oxtail, kidneys.
I know, I'm strange.
@ChickenCanoe Do you suggest a waterproof compression sack for my sleeping bag? I have nightmares about river crossing accidents
If you will be on water or going through water, a waterproof bag is essential. I don't like to be wet, dirty or with bugs when I sleep.
With all the canoeing, we have all sizes of dry bags.

The antricot or Rib eye steak over charcoal gril turned every 15 seconds, (yes 15 seconds! ) until it is medium rare salt and pepper nothing else. I prefer the Angus that was grass fed.
The Asado the ribs cut in large stripes in my smoker (cherry, and hickory ) or in the oven with salt, rosemary and all fresh garlic heds.
The hed meat and check meat, in a WONDERFUL Libyan ragu
The tongue withe mushrooms sauce
And many many more.......
When I was a kid, I'd come home from school and cook up all the parts of the steer that no one else wanted. I remembering just slicing and grilling some tongue. I wasn't hip to mushrooms back them.
Is the head meat similar to headcheese from a hog?
My wife grills over charcoal. If I grill, I do it over a wood fire. We have a smoker and a bbq grill but I prefer to build a fire in a stone pit, put a grate on it and cook the steaks on there.
