I even had it running an extra week so I could make sure this stuff was taken care of... And it was all perfect... UNTIL I added eggs.

Last time I had an issue of every two days there being a small spike and two days later a drop. Two, not one. I came to just expect it and turn the thermostat down or up accordingly..... This is different. It's like a delayed reaction....

Y'know, I do have the LG.... I might stick the eggs in there and see if the thermostat control is working ok. I tightened the screws since last time, when I though the control was slipping and not adjusting the same for every turn.

(A) both temp & RH spiking with no eggs,
(B) only RH spiking with no eggs
(C) Both temp & RH spiking with eggs
(D) Only RH spiking with eggs
