Naw - I know duck is tasty, but in all honesty, I really DO have too much poultry in the freezer right now (since I had a lot of culls last year who were raised with my pullet with ALV), and it seems wasteful to put even more there. I just pulled another two little ones out to thaw - more chicken soup!

I think I'm going to try pressure canning chicken this year - less freezer space taken up - I read the thread on BYC, and it seems that if you do it right, with an old enough bird, it turns out well. (Not so much for the little ones...) 

I don't agree young ones don't can well. You will love having cooked chicken for quick meals, traveling (I bought a pressure canner for quick meals over the road), and the space it saves!
 
Wish they had a Canadian English setting. I could keep my "u" in words and still have the dollar sign easily accessible.


When I played competitive scrabble I use to force myself to spell the words I could with the U..just to keep them fresh in my little shrinking brain. Along with any archaic spelling because we all know the Canadian spelling is very archaic...

I'll need to get the details (timing, etc.) from you - it seemed from reading the thread that some folks got mushy results if the chickens were too young/tender. I REALLY want to can a lot of it this year. I'll have a lot of processing to do because I can't keep more than a couple cockerels at most - so I'll be able to do that. I have one of thane All American pressure canners...
