I may have to look into it. I have good knives but feathers tend to dull them quickly.
My son is a chef and we bought him a custom made chef's knife and a leather strop for Christmas last year. The knife maker recommended to never use a grinder to sharpen it. The leather strop came with a vial of diamond dust. It only takes a few passes daily to keep the knife razor sharp.

I made everything except the metal folding in the Damascus knives
You should make a blade from 1095 steel.

Very nice.
The knife maker uses mostly the same type steel but he also makes some from railroad rails.
