What should I expect when crossing a RIR rooster with my EE hen.?

Well, egg laying is passed on by the father so you should get an EE that lays well. Color-wise, it depends on you EE since EE's come in all colors since they are not a true breed that breeds true.
 
With her coloring, the chicks will likely be brownish and red. If she lays blue eggs, the pullets should lay green. If she lays green, the pullets could be split between green and brown. Pea combs on the offspring will be decent indicators of who will lay colored eggs.
