New to this and wondering what breeds would be ideal for laying and butchering? I have kids and don't really want an over aggressive bird either. Any suggestions?

My personal favorite is the Buff Orpington. They are a nice calm breed, pleasant to look at and they are decent layers of brown eggs. The make an acceptable table bird too. But if you want meat birds you cannot beat the Cornish X.

Delaware's. My kids can carry all of them around even Fred the Rooster

They are fantastic dual purpose...originally developed for a larger chicken dinner they also lay real well but got replaced by the Cornish cross for meat...Cornish Crosses grow faster but they wont keep breeding true and not good egg layers.
Delaware's are some of our favorite multi purpose birds..keeps the kids busy playing with them...gives us breakfast in the morning and dinner at night. And so far they are the quietest Roosters we have-now watch him start and not shut up

Next year we will be raising extras for meat

You say "breeds," so I'm guessing you might be ok with two recommendations. I'd say leghorns for laying, Buff Orphingtons if you want brown eggs, and Cornish X's for eating.
