Egg Appetizers?

are you wanting something fancy?

how about this:

a round cracker...
- topped with a thin slice of whole hardboiled egg
- then a little creamcheese spread from one of those pastry bags with a star tip to make it look floral/fancy (see below for ideas)
- a couple of narrow long slivers of green onion (very thinly sliced lengthwise, about an inch in length) (think green onion the size of grass blades)

and one of the following on top:
- a slice of green olive with pimento inside
- a black olive slice
- a pitted greek olive
- a tiny bit of red or black caviar
- a candied walnut
- a nasturshum or borage flower
- a tiny sprig of basil

cream cheese spread might made with cream cheese and:
- dill and other fresh herbs
- mayo, spinach, chopped artichoke hearts
- garlic and cracked pepper
- mayo and crab meat
- or make something up!

anway, the slivered green onions can be sliced thin and left straight, or sliced thin and then soaked in cold water to make them curl.

the same idea could be applied using an endive leaf instead of a cracker - it makes a nice little appetiser boat in which you could put a narrow wedge of a hardboiled egg, along with a florette of cream cheese mix and dress it up with some of the other toppings. or you could use egg salad in place of the sliced egg and cream cheese mix. and the dress it up from there.

instead of green onion, you can also use fresh sliced or springs of basil, dill, or other garden herbs.

or sprinkle on some fresh chopped dill leaf.
