Egg Cleaning

There area lot of threads on this subject on this site. You can use the search feature and find some that give you good details on how people wash eggs. Many people choose not to wash eggs, but you do want them looking nice for your customers. If the eggs are going to be hatched, do not wash them.

When eggs are laid, they have a natural coating, called bloom, that helps keep bacteria from entering the egg. If you wash it or lightly sandpaper it, you remove this coating. It is no big deal if the egg is eaten soon. Eggs you buy in the store are washed, so just treat it like you would one of those, which means refrigerate it. Tell your customers it has been washed and that you recommend refrigerating it.

If you wash an egg, use water at least 10 degrees warmer than the egg. If you use cold water, the air sac shrinks due to the cooling and can suck water into the egg. This water can carry bacteria.
