Hi! A couple of months I was surfing the net and found a list that showed how many quail eggs = a chicken egg, how many quinea eggs = a chicken egg, bantam, duck, and goose eggs. I thought it would be handy, but silly me, I didn't print the information out.

I was wondering if anyone had the info I'm looking for? I'd love to be able to start baking with some of our duck and goose eggs but have no idea how many to use. Thanks!

I don't have a conversion chart like the one you had found. However this 'generic' advice should help....

Since most recipes are written for large chicken eggs, I find it easiest to weigh out any eggs I have to make the equivalent in quail, guinea, turkey, or ducks eggs.

large chicken egg = 2.0 oz
medium chicken egg = 1.75 oz
XL chicken egg = 2.25 oz

ETA:
Quail eggs take about 5 to equal a large chicken egg.
Since we always have so many pullet eggs (chicken) in early Summer, I also weigh them to get an equivalent amount to use in recipes.

Kim NC-this probably sounds like a dumb question....but are these weights for eggs in the shell or cracked open and just the egg?

No question is ever dumb. Isn't that how everyone learns?

The weights I referenced are in the shell.
