egg expiration

I will probably wash them right before I eat them, as I did with a dozen a friend gave me. Just feel better that way! haha! Good idea to mark the eggs with pencil!
 
I just heard today that fresh eggs are near impossible to peel when you hard boil them. I then heard, put them in the back of the fridge for about 6 weeks, then they become easier to peel. just wanted to share that!

I always keep a dozen or two in my second fridge for hard boiling. I have found that around the two to three week mark is good. When I take a dozen out for boiling I stash away a new dozen. I only boil them for ten minutes when the water gets to a hard boil. Then I drain off the hot water a fill the pan with ice. I let that sit for about an hour and the shells usually peel right off.
 
I have 22 hens. When I gather my eggs daily, I put the date on the container. I do not wash the eggs because if you do you will wash off the protective coating that the hen puts on their. A laid egg will stay fresh for 21 days in the pen if you have not collected it. If you wash it and I have in the past, I put a .date of 3 weeks out from the day I have collected it. If you have fresh pine shavings in their laying nest, the eggs will stay cleaner. You can wipe off the egg if it has poop on it. If in doubt of good or bad egg, put in a deep bowl of water and if it floats it is no good, if it sinks it is still good. I hope I have helped you a little.
