I don't think they were hatching an egg in a cup, you may have seen someone examining an egg that was open but still alive. This science is called embryology they just study the egg at various growth stages, then the egg dies.

I am also gonna try it on a fresh new egg!I think you're supposed to start chipping at the air cell with tweezers and keep going until you've chipped away half the surface of the egg.
Interesting! No this guy was like always trying to hatch in a cup.
