One of my hens is pecking a hole in the eggs in the coop. How do I figure out which one or how to stop this behavior?
 
Are you sure they are pecking at it and that it's not toe holes? How are the shells, do you have some thin shelled eggs?

Mac is right, you want to be sure that it's pecking and not from getting stepped on. I don't know of any surefire way to cure an egg eater other then self collecting nest boxes or the stew pot. How many hens, how many nest boxes, and how often do you collect the eggs?
 
Typically, if they manage to peck a hole in an egg, they gobble up the whole egg. If you are finding nice clean holes that look like the tip of a sharp pencil punctured the egg, then it's from their claws.
 
Thanks for responding to my question. I have 20 hens and 8 nest boxes. Typically I'll get 7-8 eggs with one with a hole in it.
