Egg questions

So.... Or drake turned out to be a hen and now we have eggs..... What do we do with them?!!

How long will they keep??!?

Fry, poach, scramble, hard boil

make French toast, omelets, custard . . .

If you want to be conservative keep them for up to four weeks in the frij. Ours keep longer, I just float test them and always crack them into a small clear container to catch bits of shell or any very rare odd-looking material in the egg. I haven't seen anything odd since the ducks were fairly young.

I give mine away as I don't eat them and a friend is actually pickling them. If you like pickled eggs that's something other than the usual things you do with eggs. You can use them the same as chicken eggs except for one thing but I can never remember what it is.
