Egg Salad for Sandwiches?

Mashed up boiled eggs, salt, pepper, pickle relish, garlic powder &mayo to taste. on toast or plain bread. We also like scrambled egg sandwiches, I chop onions, or chives, bell peppers, ham, or just eggs and scramble in butter slap some mayo on bread and have our sandwich. marrie

we top ours with...wait for it...oh yeah...bacon, cheese, tomato and lettuce on top! it's egg salad only...better!

just a way to jazz it up and make it a 'man' sandwich as we say around here!

I just toss a few hard cooked eggs in the food processor and add mayo. Pulse it til it looks good and spread it on bread.

No salt, not anything. Just eggs and mayo. Mmmm-mmm-good!

I am a kid and i like to have egg salad sandwiches in my lunch. I just put an ice pack in it tto keep it cold.

Basic and easy egg salad (my 15 yo DS makes this all the time)

2 hard boiled eggs, chopped
mix in enough mayo to get desired texture
squirt of yellow mustard, mix
salt & pepper to taste, mix

Spread on bread or toast and enjoy.

Not necessarily egg salad, but they are egg sandwiches, we toast 2 pieces of bread, scramble an egg, put the scrambled egg on 1 piece of bread, top with some ketchup and the other piece of bread, and it is yummy!!

Diced hard boiled eggs, mayo to bind, salt and pepper to taste and Major Grey's Chutney to taste. Don't knock it 'til you try it!

Thanks for all the tips, y'all! I can't believe I got to the age I am without knowing something so basic. But we are really not egg-eaters...YET.

Oh, and I would never knock ANYTHING that includes Major Grey's Chutney!
