Egg salad sandwich recipe?

I love egg salad sandwiches, please share your favorite recipes and tips for a newbie on how to make them!

I just take a shortcut and don't make a salad,, but add hard boiled egg to my sandwich that has some lunch meat and lettuce and pickle. Then I dust it with a little black pepper. JUM JUM JUM...... Making a salad is good if there will be more peeps to feed at the time... There is a time frame on keeping the salad fresh. That is my reason for the shortcut..

Some of my basics. 1st. Hard boiled brown eggs are always hard to peal, so I cut them in half with a table knife and scoop out the insides. A little finely diced onion & sometimes some celery. I always add a little home made zucchini sweet pickle relish. Salt, pepper, & a sprinkle of Seasonal seasoning. Finish it with mayo or other salad dressing. I like to play with my food so the sandwich may end up being a Dagwood. I just happen to have 3 hard egg in the fridge, waiting on me.... Jim
 
We are pretty basic here, nothing fancy for our egg salad sandwiches. Except for the fact I have to make 2 batches - DH likes mayonnaise and I prefer it with Miracle Whip.

3 hard boiled eggs, run through my egg slicer twice
1 glop of mayonnaise (about 2 tablespoons, add more after mixing to get right texture)
1 dash of ground mustard
salt and pepper to taste
Slather onto cheap, store-bought white bread - makes 2 sandwiches.

I bought a loaf of Butternut Bread the other day, just so I could make egg salad sandwiches. Something about that bread just screams for egg salad sandwiches. Not sure what I will use the rest of the loaf for, maybe more sandwiches...
