Egg show at the local fair - UPDATE - Best Eggs in Show!!

Our local fair has an egg show. I am going to enter a dozen of mine. However, I am confused at to what they judge by? When they open the eggs, what are they looking for inside besides good color in the yolk? This is all new to me. Thanks!

Updated - Just came back from the fair with a ribbon and a trophy! My eggs won Best in Show for the open division! I am tickled, LOL.

I am curious what they do with all the left over eggs? Do the 4-H kids get them?

Interesting...they shouldn't be judging the inside unless they are BEING judged on their judging...

Probably basing it on how "fresh" the eggs are inside. When doing collegiate judging, the eggs are broken out and the height of the albumen is judged. They are based 1-10 with 1 being the "peak" of freshness and 10 showing no sign of freshness. The "spread" of liquid and height of the albumen is judged with the position of the yolk.

Now the outside of the eggs are based on cleanliness, uniformity of size, color, shape, etc. Choose eggs that look alike...no big variations. Try getting the cleanest eggs. Avoid those with calcium deposits, misshapen ridges, etc.
