egg washing

My vet tells me that eggs have a coating that keeps the inside of the egg sterile until you wash them. Once washed they are no longer sterile and he sayes farm eggs are really cleaner and safer then factory eggs. This said, if I get one with a bit of dirt on it I do wipe it off but don't do anything to the others.
 
I would think that people buying "farm fresh" eggs would be happy to buy non-washed eggs... it makes them more authentic and the whole back to the farm thing is really popular, at least in Vermont. I don't wash mine, granted I don't get 70 a day, but when I do have extras and sell them, people love the fact that they haven't been washed and there is a little wood chip stuck to the egg... also as a baker, you can leave them room temp for awhile so you always have room temperature eggs for baking (I just keep a bowl on my counter and when I have more than 10, I rotate the old ones into the fridge and keep 10 baking ready... plus they look cool in their pretty bowl) I would think that would also be a selling point. I wash mine in dawn and warm water, since none of my customers want to wash their own eggs, but i wash them as soon as i bring them in and then put them in cartons and refrigerate them.I had no idea you weren't supposed to wash them, they looked dirty, and any thing that looks dirty gets washed.
