I have a Mock Eggnog recipe from my hardcover recipe book called Taste of Home's - Contest Winning - Annual Recipes 2006. I haven't made it yet, I need to get the heavy cream first.
But I like the idea that it's safe for anyone to have, young kids, elderly......without the raw eggs in it.
Use those for all the other recipes.
Mock Eggnog
2 quarts cold milk
1 package (3.4 ounces) instant French Vanilla or Vanilla pudding mix
1/4 cup sugar
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/8 teaspoon salt (Optional)
1 cup heavy whipping cream
Additional Nutmeg to sprinkle on top of each cup (Optional)
1. In a mixing bowl, beat milk & pudding mix on low speed for 2 minutes. Beat in the sugar, nutmeg, vanilla (& salt if desired).
2. In another mixing bowl, beat cream until thickened, about 3 minutes. Stir into pudding mixture. Refrigerate until serving. Sprinkle with additional nutmeg if desired.
Yield: about 2 1/2 quarts.
