Eggs, Eggs and more eggs....how many do you eat in a week?

Is there such a thing as too many eggs? We waited patiently for our girls to start laying and now they are laying like machines averaging 9 to 10 beautiful eggs a day which is awesome. We love the taste of fresh eggs but it's way more than we can eat. I do some baking and we make 8 egg omletes on the weekends and I still have 3 dozen in the fridge....LOL!

What do you do with your surplus of eggs? How many do you actually eat?


 
We go in fits and spurts with eggs...we'll go through a dozen a week for a couple weeks, then none. It's been way too hot to bake much here, so we haven't been using a lot. We've only had our girls 3 weeks today and already we've given 2 dozen away to friends. There's about a dozen in the fridge now...plus I had about 18 I'd bought before we got the chickens...I'll use those for baking. If you have extras, you might consider selling them or donating them to a local food bank or church. Some food banks will take them and some won't. I read a post from one lady who's local bank wouldn't so she just asks the folks waiting in line...most are totally thrilled!

Thanks! Good idea with giving eggs to the food bank but I can't imagine why they wouldn't take fresh eggs.....
 
We are overrun with eggs too, and we only get about three a day. But only two of us eat them very regularly. We've made eggs all different ways, scrambled them, deviled them, put them in breakfast burritos, and now I'm thinking about making potato salad or chicken salad with all the boiled eggs. They are so fresh, they don't peel very easily, so they aren't pretty, but they are tasty. We use them for all our baking and cooking recipes too, and since ours are small pullet eggs, we use two for every one egg a recipe calls for. I can't imagine what I'd do if I got 8-10 a day! I'd start giving them away to friends and family, or the food bank, that is a good idea. Our local farmer's market lets people sell them there.

Some counties have sort of sticky rules about "regulations"...go figure! :( But the folks in line sure aren't so picky! Most church food pantries or "soup kitchen'' type charities aren't either. They're such a good source of protein for folks. I know our local food bank rarely has much in the way of protein...the once-a-month commodities often have a jar of peanut butter or bag of pinto beans, but that's about all. They sometimes have eggs, but usually not many so I think they do accept donation from "regular" folk like us. It might be worth a phone call.

I will follow up and check with our local church and food bank. Eggs are the perfect food source for people in need =)
