what is your favorite egg? Quail? Chicken? Blue egg, Brown?
I like brown eggs but I want to try quails' and blue chickens' eggs.

Quail eggs are a hassle, as you have to crack so many to make an omelette, but oh man they are so delicious. I like them way more than chicken eggs.
They're richer in flavor. I can't wait to try making creme brulee with them.

quail eggs are hard to find, I have only seen them at one store and that was one that wasn't local

Definitely quail eggs! They are SOOOO delicious. We don't usually fry them because they are a pain, although with a quail egg cutter, they're not too bad. Mostly, we boil them. They are the most delicious boiled eggs ever, and my kids can wipe out three dozen in about five minutes. Even with having to peel them--which is also a pain...

Next to that, I prefer duck eggs for frying and scrambling and baking. Then homegrown chicken eggs, but ONLY homegrown. Color doesn't matter much to me.
