Eggs for Dinner

Just wondering if ya'll have any special recipes that allows you to make eggs for dinner (instead of the same-ole fried, scrambled, boiled, etc.)

Hard boil eggs, lots of them. A dozen is enough.
Let them cool and then slice them up.

Meanwhile, make a cream gravy of butter/margarine, flour and milk. It should be nice and smooth. Add salt and pepper to taste.

Place the eggs in the gravy and gently stir to incorporate everything. Allow to heat through for a few minutes and serve the "egg gravy" over buttered toast.

I like to add sauted, minced onion, shredded carrot or cooked peas into my gravy. Use your imagination, but make sure the gravy-egg part stands out.

We ate this a lot when I was a kid. In case you missed my story, my mom was a Norski farm kid from ND. Eggs, milk and bread were common staples for her - and so for us. This is still one of my favorite foods and my son, today, loves it.
 
We take left-over rice from other meals, and make fried rice with egg and whatever is good in the garden.

Just prepare the egg like a thin omlet, remove from the pan, cut into strips, and add to the fried rice.
