Eggs for Dinner

Farmer's Breakfast is good for dinner too:

diced potatoes cooked with onion until potatoes are done (green bell pepper if you want too)
top potatoes with some cooked crumbled bacon or diced ham or cooked crumbled sausage
beat some eggs with some milk or cream
pour eggs over the potatoes/onion/meat and let sit until almost cooked completely, lift up edges for uncooked egg mixture to flow underneath
top with some grated cheese (cheddar, muenster, jack) and put pan under a broiler to melt the cheese (or put on lid for a couple of minutes)

serve hot with toast or biscuits, butter, jam

Of course, my husband works night shift so his breakfast really is our dinner and so that's when I'll make the french toast or ham and egg type breakfasts. And it isn't that hard to make savory french toast. At least in theory, I love it with oooeeeyyy goooeeyyy syrup way too much to try something like that, but I have seen it done.
