To me, the water test is a lot more trouble than it is worth. My aunt always broke an egg into a cup or something before she added it to whatever she was cooking. That way if an egg was bad she could discard it. I do the same. As far as I am concerned if an egg looks good and smells good, it is good and into the pot it goes. If it looks or smells bad, it goes down the sink.

There are a whole lot of factors that figure in to whether an egg is good or not. Time is only one of them. Your best bet is to do what my aunt used to do. She would break each egg into a cup or other small container before she added it to whatever she was cooking. That was if it was unacceptable she just discarded it and she wouldn't have ruined the whole thing. If an egg looks good and smells good it is good.
