Eggs of all shapes and sizes and your thoughts, please

Hi All!

I just recently started strolling through the world of eggs outside those of chickens and 'caviar' by picking up a dozen duck eggs for $5 from a lady a few miles away. I was really impressed with the size and taste of duck eggs and I want to try more exotic options. I've always been fascinated by ostrich eggs, but I doubt I'd be able to get any for eating.

What's your favorite non-chicken egg to eat? Do you have a supplier that I might be able to contact to get some? What's the best method of serving your exotic eggs of choice? The lady I bought my duck eggs from insisted I have french toast first thing, which I did.

Anyone have a supplier of larger eggs like emu or ostrich? Any eggs I should completely avoid?

Don't know about a supplier but around here if its an egg you eat it. We just hard boiled goose eggs that were sitting in the refrigerator. I use duck eggs for cooking all the time. Turkey eggs are good too but I find the yoke is alittle harder to scramble. If you want really great cakes or pies go with duck eggs.
 
I'd love to get my hands on large bird eggs. Are there any layers beyond ducks and chickens that lay often enough to be as profitable for eating as for breeding? I always thought the lack of emu / ostrich eggs was because they didn't lay that often so people with these birds would be trying to get as many fertile eggs as possible.
 
I don't know about those eggs but geese only lay for a few months each year. My geese started laying in March and are still laying every other day or so. I don't want any more of this particular breed so we are enjoying the eggs. My son in law loves them in his energy drinks. Last year I was getting about 17 eggs a month from three geese. It was their first year and I wouldn't have hatched them anyway as I was told to wait a year by the breeder. My mother in law enjoyed every one of them. Shes gone this year so we started cooking them ourselves.
