Eggs on Pizza!

Spinach, Mozzarella Pizza topped with fresh eggs...yum....



PIZZA
4 cups young spinach leaves
1 Tbsp olive oil
2 garlic cloves, crushed
Pizza Dough
Tomato Sauce
8 oz fresh mozzarella cheese, thinly sliced
4 eggs
freshly grated Pecorino cheese
sea salt & fresh ground pepper

Preheat oven to 425F & put baking tray in oven. Put spinach in large saucepan. Cover with a lid and cook 2-3 minutes, until spinach wilts. Drain well. When spinach is cool enough to handle, squeeze out any excess water with your hands.

Heat olive oil in skillet; cook garlic for 1 minute. Add the drained spinach & saute 3-4 minutes. Add salt & pepper to taste.

Divide dough into 4. Put on lightly floured surface; roll out each piece to about 7-inches diameter. Brush with olive oil & spoon tomato sauce on top. Put the spinach around the base, leaving space in the middle for the egg and layer mozzerella on top. Season with more salt & pepper. Transfer to hot baking tray and cook for 10 minutes. Remove from oven and crack an egg in the mddle of each pizza. Top with Pecorino and return to oven for another 10 minutes, until base is crisp and golden, and the eggs have just

It's sounding so good...when is the continuation scheduled?
 
A local donut place does breakfast pizza & it is way yummy! They sell by the slice or whole pizza. not sure about the recipe using spinach. Kids will eat raw spinach, but not cooked.
 
the hospital i work at has a breakfast pizza in the cafeteria every once and again. i quite enjoy it. seems like it has scrambled eggs, diced tomatoes, bacon, mushrooms and onion. sometimes it also has green pepper if they have them on hand.

Spinach is super good on pizza, and hard boiled egg yolk is a good combination with spinach. I hadn't thought of putting egg on pizza, but I can imagine how that combination would work.
