Mmmmm Egg rolls!!!

Soo goood. I swear there is no such egg roll I don't like! Chinese, Filipino, Vietnamese, Cambodian, Laos, and Korean friends' parents all have their own regional recipes of fillers and dips. Only if I was so skilled to learn.

I do exactly how Katy does it. I plan on a day to make LOTS. I sorta cheat, tho and make mine much easier. I take a bag of the shredded cole slaw mix from the produce department, with carrots in it, chop onions, fry ground pork and season it heavily with pepper, garlic powder, and soy. When the pork is done, I toss in the onions and cole slaw mix, fry it for just a bit. Then I cool it down, it will fill about 12-14 egg rolls. I make about 50 of them, and freeze them. When I want a couple I just pull them out of the freezer still frozen, toss them in a fry pan with a little olive oil, turn them when brown, and oh boy oh boy are they good. I still havent mastered a good sweet and sour sauce, tho. I hate buying the stuff in the grocery story.

I'll have to dig my sweet & sour sauce recipe out. I don't care for sweet & sour, I dunk mine in soy sauce, but the hubby likes this recipe....he doesn't like the ones in the store either.

Here's the sweet & sour sauce I make

1/2 cup pineapple juice
1 cup water

Heat together and then add 1/4 cup sugar. Heat until sugar is dissolved.

Add 1/4 cup red wine vinegar, 3 T lemon juice. Heat to a simmer.

Mix 2 T of cornstarch with a little water to make a think paste and add to the rest of the ingrediants....cook until misture becomes clear. If you want to you can add 4-6 drops of red food coloring.
