The washing of the eggs. I have really never noticed dirty store bought eggs. Do they not wash them? Does the washing really make them go bad quickly?? I seem compelled to give them at least a quick rinse and dry. Just how dangerous is that?

yes, store bought eggs are washed.. although I think they are also rinsed in some sort of solution to help keep out bacteria?

I don't think it's so much that washing is dangerous.. it's just that you are washing off the 'bloom' which helps to keep out the bacteria.

And use water warmer than the egg. Cold water causes the contents shrink, and it can draw bacteria INTO the egg.

Two weeks on the counter? Do you know how many eggs I've tossed because they were left out over night before being put in the fridge???
How many days can they be in the nest and still be used if they are not fertile?

I leave mine on the counter in a little basket.... I only get one a day so they don't last long at all.... actually I have 4 in the basket right now!

If you are worried about an egg gone bad you can always do the fresh egg test by dropping the egg into a bowl of water.....if it sinks it's fresh, but if it floats it's bad.

I thought the regulations were that eggs would store best for about 6 weeks in a cool, dark dry place.

If you cook them IN the shell - you'll kill any germs, and if you crack and take em out of the shell - well then the germs don't get very close.... (unless you drop it in the cup)

Perhaps leave them till you want to cook/eat them and THEN wash them? that might make it feel better for you...?
