Eggs that have been set on by a broody hen

I have about 20 eggs that have been set on for aorund 23 hrs. by a broody hen. Are they still safe to eat. At what stage does a fertile egg start to become a baby chick. From what I understand it is around 5 to 7 days, however at what point should poeple not eat eggs that have been set on by a broody hen?
 
I would say they are still okay to eat. I had a grandmother that would use them. I know some here may not agree with it, but you could always crack open the eggs over a little bowl before adding them to something and pick out any little "icky" parts you might encounter
