Emden question?

First time with geese, got them in late June. I have five and would like to eat one at Christmas. They seem to have stopped growing so my question is, should I kill it now and freeze it or should I wait and have it fresh. Just wondering if waiting will make it more tough. Also I need to figure out which are males and females so I don't off one that I need for reproduction...but that is another question. Thanks!

as for when is best to slaughter You may find in for on the meat bird thread here on BYC, most of us keep ours just because we like them.
