I just picked these chicks up and one has... it looks like a mouse poop sticking out from her backside. It’s hard and looks maybe like prolapsed vent with a poop stucking out? Or maybe this is t even her vent I’m looking at?

It's hard to tell in the photos.
It could be this chick did not absorb the whole yolk sac and that's what you're.

Can you watch this chick closely to see if it can poop?

Omg that is SO HELPFUL, thank you. I will keep an eye on it, it didn’t look like what I thought pasty butt would look like but had no idea what else it could be. If it’s un absorbed yolk is that a problem and is there something I should do?
 
Okay a little more research reveals it might be umbilical cord hernia. Advice here on BYC is to just leave it be.
Leave it be. Do not try to take it off... You will pull the chicks and guts out if you do.

I would make sure that nobody is picking on it and make sure that it can poop.
