You can eat any kind of egg.
Turtle, snake, sandpiper, and even balut duck eggs.
ETA
If the egg is fresh, it is primarily composed of yolk and albumen.
The exception is balut eggs that have been incubated for about 15 days. Gross, I know, but people eat them.
