Your temp and humidity sound good.
Going by recommendations for Ostrich eggs, about 12-15% weight loss over the entire incubation would be something to shoot for.

This is what I live by. This time they will still be in a cheaper incubator, but forced air instead of still air with a small fan. Last time I weighed too often and was anxious the entire time. Taking a step back this time and going to just do the weekly weigh ins.

The math was at 15%.

I wish they had chicken sized emus - I would take a chance on them. Maybe a 42" chain link fence (1/3 acre) would be enough for them.
