English Chick/Jamie Oliver question

Here in the South we add the sugar while it's still warm so it will dissolve...then ice...Sweet Tea is the only way!!

LOL, just well brewed tea, a bit stronger than average maybe, strained if made with loose tea, and either refrigerate it or just let it cool to room temp, and add ice! A ganish of some crushed mint is nice but not necessary.

You can sweeten it while still warm, but I usually keep a simple sugar solution mixed up and in my fridge for easy sweetening. (I hate unmelted sugar in my iced coffee or the rare glass of tea) It's not drank here with milk at all.

For 1 gallon of tea -

10 black or orange pekote black cut tea bags. (loose black tea can be hard to find)
1 quart of water

Bring water to a boil. Add tea bags. Remove from heat. Cover and let steep. Tea needs to be good and strong without allowing it to become bitter.

While the steeped tea is still hot add sugar - 1/4 - to 1 cup (for a gallon of tea) depending on the level of sweetness you prefer. The sugar MUST dissolve while the tea is hot. You cannot properly sweeten tea if it is cooled. Stir the hot tea until you are sure the sugar has melted. The sugar has to melt and become part of the tea not an additive to the tea.

Fill a 1 gallon plastic pitcher with ice completely full.

Pour the sweetened tea over the ice. Fill the pitcher with ice water, stirring to properly cool and mix the tea.

Pour into a nice glass pitcher, cover, and refrigerate.

To serve pour in a tall glass filled with ice. Garnish with lemon and/or mint if you like.

If you like fruit teas you can add frozen chuncks of fruit to the glass with ice as well.

Yeah, I couldn't help but think the only difference was dissolving the sugar while hot and chilling the actual jug in the fridge. That was a bit harsh MissP! Hardly a deal breaker....
 
Well now, Master Greyfields, that'll "learn" you to mess with Miss P. and/or southern "wimmen."

I grew up in the south and that is the way I have always seen it done.
