Enough ventilation?

I would open up the gable ends (the triangles at the top under the roof. Cover them in h/w cloth of course. That way you can get flow high up above the chickens when they roost.
I also have open soffits, but if you read the definitive @3KillerBs article you need to think about flow and the soffits will ventilate better if you can also open up the roof ridge.
 
Are these soffit areas open to the outside?

They are now open! My husband did it today. Hoping this helps because I was noticing moisture build up on the inside of the windows when most of the chickens stayed in the coop this weekend during winter weather.

Good job hubby! Do monitor it though. I am worried that without a roof ridge vent that opening up the soffits won't do a lot. Typically the flow from open soffits is in through the soffit and out through the roof ridge vent. Without the roof ridge having a vent there will be nothing to suck fresh air in through the soffits.
If you actually have a roof ridge vent then please ignore everything I wrote above!

Yes, right along the top. It sure looks like you might have one. If you are inside, can you see any daylight seeping through from right up there?
At least in that picture there is not enough snow to block it. Mine gets blocked sometimes with snow but somehow it slides off the very top bit quite soon so it is mostly clear.

honestly, I hadn’t noticed much daylight coming through but it’s definitely open up there, just not much, I guess. That pic is from before the 8(ish) inches of snow we got this weekend. It is going to warm up and it’ll slide too, I bet.

Great! I think you are all set. If it is definitely open up there then you will definitely get air flow pulling air out of the coop and being replaced by new air coming in through the soffits.
Hopefully you will stop seeing moisture inside.
