Honestly I don't see the difference, except one has fur and one feathers. We seem to be biased in that way. People who have no trouble killing a chicken balk at whacking cute little bunnies. Admittedly I'm one of them, but I am going to do it anyway, as there really is no logical difference. It is all in my head. Slitting a chicken is no different from slitting a steer or a goat, and you do it for the same reasons... to keep the heart pumping in order to get a good bleed out.
Again I'm not judging folks who slit, especially those who sell their birds. This was all brought home to me just yesterday afternoon. I chop to get that instant death, as I feel it is the most humane. I don't mind a little blood in my meat. I'm not for sure but I think it probably adds taste to the chicken.
But a colleague has been bugging me since she found out I raise and kill my own pastured poultry to sell her some of my chickens. I didn't really want to do that since I don't think I'm ready for it, so I just gave her one. Handed it to her last night and you could see blood in the frozen water surrounding the bird inside the gallon plastic bag.
Her reaction was priceless. Wish I had a camera for that split instant between first seeing it and regaining her composure. "There's, uh... blood". She is all about humane treatment of animals, but I'm not sure she was ready for what that actually means.
I recommended she buy her birds from the farmer who sold us the beef, when he does chickens this spring.
