Temp dropping when you put eggs in is not a big deal. A hen will get off her nest every day untill the last 3 days, for up to an hour to stretch her legs, eat and poop. And the babies hatch just fine.
I set eggs every friday, so every 8th day I am adding new eggs to my incubator. I would absolutely recommend making one of the incubators a hatcher. That way you can set eggs every week in a rotating fashion no problem. The hatcher can run at a higher humidity and the incubator can be opened to add egg and candle whenever you want.
