80 will fill a half gallon jar.. with a whole onion and 4 cloves of garlic, fresh dill and thyme from the garden.. good stuff

I like spicy pickled eggs. I'll never forget the first time I made pickled quail eggs. I was a bit skeptical, but loved them once I tried them.

I offered one to a good friend, and I could see the look on his face saying, "I'm eating this because you're my friend..."

I also watched his expression change completely when he tasted it, and he asked to take a jar home with him.

So many people who have never tried them really become fans.. I’ve made them since I was a kid.. one of my regular treats at my grandparents general store.. I make their recipe pickled chicken and quail eggs... I regularly sell em to my local family still, helps pay for feed..

I pickled chicken eggs once when I was in my early 20s. I didn't care for those, but a Russian friend of mine loved them and ate one or two every time he came over until they were gone.

I've made pickled quail eggs before and have a batch still in the fridge, but used a different recipe.
Your recipe appears to be "80 will fill a half gallon jar.. with a whole onion and 4 cloves of garlic, fresh dill and thyme from the garden.." I'd like to try it on my next batch. Do you use apple cider vinegar as the liquid or something else?
 
I use white 2 cups white vinegar, 1 cup filtered water, 2 bay leaves, 2 teaspoons white sugar, 1 teaspoon salt & pepper, 2 tablespoons picklin spice, 25-30 mustard seeds, 15 black peppercorns, 2 cloves crushed garlic and 3-4 slices of onion, add any hot peppers now to the brine, slowly simmer 10 minutes bringing to a rolling boil for 3-5 minutes. In jar add onions garlic sprig of dill and some thyme, then 6-10 eggs and repeat layers of onions herbs and eggs until jar is full (45 eggs fill a quart/32 Oz) I had 80 eggs and I used a half gallon this go round.. remove bay leaves and boiled onions/garlic pour hot brine liquid with peppercorns and mustard seeds over eggs in jar, let sit with lid loose for an hour, tighten lid and ring and invert jar several times, swirl it around.. let continue to cool for 4-5 hours, then they go in fridge and every morning and every evening invert jar and swirl for 10-15 seconds for 5-7 days then they are ready.. the waiting is the hardest part.. ~ Tom Petty lol

I have made several brines over the years.. this is a sweet southern brine.. some use ACV some White Wine Vinegar.. they are good but this is by far the most popular brine I’ve ever made.. chicken eggs have to sit 2 weeks, quail eggs 1 week.. the swirling is important do not shake jar, just turn upside down and swirl.. also I hard boil my water before adding eggs, then start timer for 10 minutes and hard boil your eggs 10 minutes and immediately remove and add into ice water to cool for a minute, remove eggs and allow to dry and cool before peeling.. trust me..
