2nd Times The Charm Cornbread Pudding
DIRECTIONS
  1. Preheat oven to 375 and spray glass loaf pan, then layer cornbread in bottom.
  2. In a mixing bowl, whisk eggs, milk, sugars, and aromatics.
  3. Pour over cornbread, pressing chunks of bread down into liquid. Liquid should cover all bread.
  4. Bake at 375 until all pudding mixture is baked and golden.
  5. Delicious served hot or cold!

Here's my favorite!

Muesli and berry egg wrap :cool:



    • 2 large British Lion eggs
    • 25g low sugar muesli
    • 1/2 tsp ground cinnamon
    • A drizzle of sunflower oil
    • 75g of mixed raspberries and blueberries
    • 3 tbsp fat-free Greek yogurt
    • A drizzle of honey
METHOD: Beat the eggs with the muesli and cinnamon.

Heat the oil in a non-stick frying pan, pour in the eggs and cook over a medium heat for two minutes.

Use a spatula to push the cooked egg into the centre of the pan and allow the runny egg to fill the space.

Repeat until no more runny egg is left.

When the base is golden, transfer the omelette to a plate.

Scatter over the fruit and top with yogurt and honey.

Fold over and serve.

Well, this recipe looks yummy and easy also, I am surely going to try this. Thank you for sharing it.
 
Harvested my first ever home grown courgette this morning, so wanted to find something eggy to do with it that was fairly quick and simple. Found this recipe for scrambled eggs. It's really just scrambled eggs with fried courgette, but the addition of some fresh mint is inspired and it was a beautiful breakfast.
