excess eggs

Try this easy breakfast, works great if you have a gathering and so easy.

Baked eggs:

line muffin pan with cupcake liners (easy clean up)
line each cup with a 1-2 pieces of deli sliced ham
add one egg to each cup
top with 1 Tblspoon of cream
mix a bit of cheese, and bread crumbs together in food processor, and top eggs

Bake in oven at 350 degrees for 20 minutes. Stick in canned biscuits at the same time, and all comes out of the oven together ready to eat.

Add juice, set the table and you can go sit on the couch with your coffee till it is done!
 
I had that problem last year, I brought a book called 365 ways to cook eggs...omg after awhile I just about started laying them myself. I have that problem now also...I give lots away..but only thing is now I want to get a plucker and I was thinking about saving my eggs money to use towards it..an extra 6 dozen a week..but the ones that got them free still look for them to be free and I can't tell them what my plans are...
 
Scramble them then put 3 in an 8 oz yogurt container with a piece of celophane on top and freeze--they are good for at least 6 months( while they are not laying much in winter

looks like you'll have to find some new customers that don't mind paying then! i don't think you'll have a problem finding people to enjoy delicious farm fresh eggs.

by the way... that is a great idea to save for a plucker! are you making a whiz-bang?? i just got the book and can't wait to get started.



as far as extra eggs.. i have about 350 lbs of dog around here.. so they usually clean up the extras (if there are any) or the ones that get really dirty.
those pickled eggs look awesome! i gotta try that one of these days...

Make sure the neighbors to your immediate left and right get a dozen every week. My neighbors love my chickens and roosters (even the 4:30 crowing) because I deliver a dozen of eggs to each neighbor each week
